Gluten Free Pancakes
Need:
- 2 TBS white rice flour
- 1 TBS glutinous rice flour
- 2 TBS tiger nut flour
- 1 egg
- 2 TBS sugar
- 1 TBS Oil
- ½ tsp Vanilla extract
- Juice from ½ an orange (water also works)
- 1 tsp baking powder
Do:
- Mix the rice flour with some hot water.
- Add the tiger nut flour.
- Mix egg, sugar, oil, and vanilla extract.
- Add Flour and Baking powder, and whisk until smooth.
- Gradually add orange juice/water until the consistency is thick and scoopable
- Fry low and slow.
